Creamy Tomato Soup

The ultimate Winter warmer, this creamy tomato soup uses BioCreamy to add thickness making this soup substantial enough to be an entire meal. Enjoy with a toastie, or mix in some BioCheese Grated Parmesano for an extra cheesy hit.

Ingredients

2 Cups chopped onion

1 Cup chopped carrot

2 Tbsp minced garlic

2 Tbsp BioButtery

8 Cups tomatoes, roughly chopped

4 Cups water

2 Tbsp tomato paste

1 Pinch cayenne pepper

3 Tsp salt (add more to taste)

1 Tbsp chopped fresh basil

¼ Cup BioCreamy

Method

1. In a pot, sauté garlic, onion and carrot in BioButtery until soft (5 or so minutes).

2. Add tomatoes, water, tomato paste, cayenne pepper and salt.

3. Cook mixture until tomatoes are completely soft (15 or so minutes).

4. Add basil and combine.

5. Blend mixture together with a stick blender, or if you don’t have one, you can transfer to a food processor or blender.

6. Once blended, add the BioCreamy and combine.

7. Serve with a toastie filled with BioCheese for extra bio goodness!
