One Pan Gnocchi

We love a one dish wonder! Presenting this super easy and delicious creation topped with BioCheese Grated Parmesano. Colourful, filling and with a little kick that will surprise you, this dish is the perfect winter warmer for the whole family. Who DOESN’T love gnocchi?!

This recipe will make enough for dinner and leftovers. If you’re catering for four or less, consider halving the quantities.

Ingredients

1.5kg Gnocchi, uncooked

4 Punnets cherry tomatoes

4 Capsicum, chopped

1 Spanish onion, chopped

½ Cup olive oil

1 Tsp salt

1 Tsp pepper

1 Tbsp garlic powder

1 Pinch chilli flakes

1 Tbsp dried oregano

1 Tbsp dried basil

½ Cup BioCheese Grated Parmesano

Method

1. Preheat oven to 200°C

2. Place gnocchi and all vegetables in a baking dish

3. Drizzle over olive oil

4. Sprinkle over all seasonings

5. Roast for approximately 40 – 50 minutes, tossing occasionally

6. Remove from oven and sprinkle over BioCheese Grated Parmesano

7. Stir through, serve and enjoy!
